Beef brisket, from cows rotationally grazed on diverse grass and pasture on our farm.
Each package is one 1/2 brisket. Briskets have two halves: the flat and the point. The flat portion is leaner and usually has a more rectangular shape, great for corned beef, slicing, and traditional brisket dishes. The point portion has more marbling and a more irregular shape and is great for smoking or braising.
Meal ideas: great oven-roasted, smoked, or cooked in the slow cooker; delicious as a main course or in tacos, sandwiches, or for barbecue.
